Cream of Tartar (Food Additive)
Definition
Cream of Tartar, scientifically known as potassium bitartrate (KC₄H₅O₆), is a naturally occurring by-product of the winemaking process. It appears as a fine, white, acidic powder commonly used in food applications as a stabilizer, leavening agent, and anti-caking agent. Due to its acidic nature, it helps maintain pH balance in recipes, stabilizes egg whites, and prevents crystallization in sugar syrups.

Cream of Tartar is derived from the natural fermentation process in winemaking. As wine ages, potassium bitartrate crystals accumulate inside the barrels and are later collected and purified.
